Painted Mountain grain corn. We let these ears dry on the stalk and then harvest them when kernels are plump, bright and vibrant. Use these kernels as you would dried beans (for instance in pozole) by boiling or pressure cooking them until soft. Kernels are chewy and substantial. Or you can grind the kernels into flour with a grain grinder and add a small amount to your favorite baking recipes. These are beautiful cobs, so you could use them for decoration until you're ready to eat them!
These are a labor of love, usually getting 1 ear per stalk.
